eSIM setup on iPhone:
Pre-liminary setup: Make sure you these 3 things
1) Your iPhone is eSIM-compatible
2) Your iPhone is not carrier-locked
3) You have stable internet connection when installing an eSIM

In Most cases, QR code can be used only once. You should not cancel the installation process once started.

Method 1: Using a QR Code
go to Settings > Cellular > Add eSIM

Scan QR code
Scan the QR code that you purchased, or you can enter the details manually.

Activate eSIM
Add Cellular Plan > Secondary > Use Secondary as your default line
